  • Yield: 4 servings 1x

Description

A refreshing and vibrant salad combining sweet watermelon, cooling cucumber, and savory feta for a delightful summer dish.

Ingredients

Scale
  • 4 cups fresh watermelon, cubed
  • 2 cups cucumber, diced
  • 1 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup red onion, finely sliced
  • Juice of 1 lime
  • Salt and pepper to taste
  • Optional: 1 tablespoon extra-virgin olive oil for drizzling

Instructions

  1. Start by cutting the watermelon into small cubes. Be sure to remove any seeds you may come across.
  2. Next, grab your cucumber and wash and dice it into similar-sized pieces as the watermelon.
  3. In a large mixing bowl, combine the cubed watermelon and diced cucumber.
  4. Add the crumbled feta cheese, chopped mint leaves, and finely sliced red onion.
  5. Squeeze the juice of one lime over the salad, and sprinkle salt and pepper to taste.
  6. Gently toss everything to ensure all ingredients are well coated.
  7. Let it sit for about 5-10 minutes to allow the flavors to meld, then serve chilled.

Notes

For a low-carb option, swap watermelon with cantaloupe. Ensure to serve the salad fresh as it may release water over time.
