Description
A succulent Christmas Prime Rib that serves as the perfect centerpiece for your holiday feast.
Ingredients
- Prime Rib Roast (bone-in preferred): 5-7 pounds
- Kosher Salt: 3-4 tablespoons
- Freshly Ground Black Pepper: 2-3 tablespoons
- Garlic Cloves: 6, minced
- Fresh Rosemary: 2 tablespoons, chopped (or 1 tablespoon dried)
- Fresh Thyme: 2 tablespoons, chopped (or 1 tablespoon dried)
- Olive Oil: 3 tablespoons
- Beef Stock: 1 cup (or homemade stock if available)
- Mustard Powder: 1 tablespoon (optional)
- Horseradish: Freshly grated (optional)
Instructions
- Begin by taking your prime rib out of the refrigerator about 2 hours before cooking.
- Preheat your oven to 450°F. Prepare the seasoning by mixing the minced garlic, rosemary, thyme, olive oil, salt, and pepper in a bowl.
- Rub the seasoning all over the prime rib.
- Place the seasoned prime rib on a rack in a roasting pan, bone-side down.
- Roast the prime rib at 450°F for the first 20 minutes.
- Reduce the temperature to 325°F and continue cooking until the internal temperature reaches 130°F for medium-rare (about 1.5 to 2 hours).
- Let your prime rib rest for at least 30-45 minutes before slicing.
- Prepare a simple jus by deglazing the roasting pan with beef stock and simmering.
Notes
Letting the prime rib rest is crucial for juicy meat. Be cautious with seasoning to avoid blandness.
