Turkey Pot Pie

  • Author: emily-mitchell
  • Total Time: 50 minutes
  • Yield: 4 servings 1x

Description

A comforting turkey pot pie filled with tender turkey and colorful veggies, all wrapped in a flaky crust.

Ingredients

Scale
  • 2 cups cooked turkey, shredded or diced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1/3 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk (or a dairy-free alternative)
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil or butter
  • 1 package refrigerated pie crusts or homemade pie crust (enough for top and bottom)
  • 1 tablespoon fresh parsley, chopped (optional)
  • 1/2 cup sliced mushrooms (optional)
  • A splash of lemon juice (optional)

Instructions

  1. In a large skillet, heat the olive oil or butter over medium heat. Once it’s hot and shimmering, stir in the diced onion and minced garlic. Sauté for about 3-4 minutes until they’re translucent.
  2. Next, sprinkle the flour over the cooked onions and garlic. Cook for about a minute, stirring constantly to avoid lumps.
  3. Gradually add the chicken broth, whisking continuously to combine. Then, pour in the milk, followed by the thyme, salt, and pepper. Stir until thickened, about 5-7 minutes.
  4. Once thickened, fold in the cooked turkey and frozen mixed vegetables. Stir everything together, adding optional parsley or mushrooms if desired.
  5. Preheat your oven to 425°F (220°C). Roll out one pie crust and fit it into a pie pan.
  6. Pour the turkey filling into the crust, then roll out the second crust and place it on top. Crimp the edges to seal, and cut slits in the top to allow steam to escape.
  7. Bake for 30-35 minutes or until the crust is golden brown and flaky. Let cool for at least 10 minutes before serving.

Notes

Feel free to substitute mixed vegetables with whatever you have on hand. You can also make healthier alternatives like a cauliflower crust or use almond milk.
