Description

A refreshing Thanksgiving Cranberry Salad bursting with flavor and nutritious ingredients, perfect for your holiday feast.

Ingredients

Scale
  • 2 cups fresh cranberries (or frozen, thawed)
  • 1 cup granulated sugar (adjust for sweetness)
  • 1 cup diced apples (Granny Smith recommended)
  • 1 cup orange segments (membranes removed)
  • ½ cup chopped walnuts or pecans
  • ½ cup feta cheese, crumbled
  • 1 cup mixed greens (spinach or arugula)
  • ½ cup balsamic vinaigrette
  • ¼ cup dried cranberries or cherries (optional)

Instructions

  1. Start by rinsing the cranberries thoroughly under cool water.
  2. Add the cranberries to a medium bowl and sprinkle the granulated sugar over them. Let sit for about 10 minutes.
  3. Chop the apples into small pieces and dice the orange segments, removing any excess pith.
  4. Combine the cranberries, apple pieces, and orange segments in a large mixing bowl.
  5. Fold in the chopped walnuts or pecans gently.
  6. Toss in the mixed greens and feta cheese carefully.
  7. Drizzle the balsamic vinaigrette over the salad and toss gently until evenly coated.

Notes

This salad is best enjoyed fresh. Store leftovers in the refrigerator for up to three days, keeping the dressing separate until serving.
