Description
A classic, easy sweet potato casserole that’s perfect for holiday dinners. Choose your topping for a cozy yet versatile dish.
Ingredients
Scale
- 3 pounds sweet potatoes (about 4 to 5 medium)
- 2 tablespoons butter (melted, plus a little extra for the dish)
- 1 cup brown sugar
- 1/2 cup milk or half and half
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 teaspoon cinnamon (optional)
- For Marshmallow Topping: 2 cups mini marshmallows
- For Pecan Streusel Topping: 1 cup chopped pecans, 1/2 cup flour, 1/2 cup brown sugar, 1/2 cup butter, and a pinch of cinnamon
Instructions
- Cook the sweet potatoes: Preheat the oven to 400°F. Poke the sweet potatoes a few times with a fork, set them on a baking sheet, and bake until very soft, usually 45 to 60 minutes. Let them cool, then scoop out the insides.
- Mash and mix: Turn the oven down to 350°F. Butter a 9×13 baking dish. In a bowl, mash the sweet potato flesh until mostly smooth. Stir in the melted butter, brown sugar, milk, eggs, vanilla, salt, and cinnamon until creamy.
- Add your topping and bake: If using pecan streusel, sprinkle it on top and bake for 25 to 30 minutes. If using marshmallows, bake plain for 25 minutes, then add marshmallows and bake for another 8 to 12 minutes until puffy and golden. Let cool for 10 minutes before serving.
Notes
Choose good sweet potatoes; they should feel firm and heavy. Bake instead of boil for better flavor.
