Description

A classic Southern dish featuring sweet, buttery corn with delightful crunch, perfect for barbecues and family gatherings.

Ingredients

Scale
  • 4 cups fresh corn kernels (about 6–8 ears of corn)
  • 1/4 cup unsalted butter (or plant-based alternative)
  • 1 small onion, finely chopped
  • 1 small bell pepper, diced (optional)
  • 1/4 cup heavy cream (or plant-based cream substitute)
  • Salt and pepper to taste
  • A pinch of sugar
  • Fresh parsley or chives for garnish (optional)

Instructions

  1. Start by husking the corn and removing the kernels.
  2. Once you’ve collected your fresh kernels, grab a skillet and melt the butter over medium heat.
  3. Add the finely chopped onion and sauté until it turns translucent, about 3-4 minutes.
  4. Now, it’s time to add the corn. Stir the kernels into the mixture and cook for about 10 minutes.
  5. Pour in the heavy cream, sprinkle with salt, pepper, and a pinch of sugar. Stir everything together and let it simmer for another 5 minutes.
  6. Once you’re satisfied with the creaminess, taste and adjust the seasonings as needed, then serve it warm, garnished with fresh parsley or chives.

Notes

For an extra kick, add diced jalapeños or smoked paprika. Can be made vegan with olive oil and plant-based cream.
