Description
Quick and easy shredded chicken tacos perfect for busy weeknights with delicious, customizable toppings.
Ingredients
Scale
- 2 lbs boneless skinless chicken breasts or thighs
- 1 small onion, sliced or chopped
- 2–4 cloves garlic, minced
- 2 tbsp taco seasoning
- 1 tsp ground cumin
- 1 tsp smoked paprika (optional)
- Salt and pepper, to taste
- 1 cup chicken broth (or water)
- 1 lime, for zest
- 8 corn or flour tortillas
- 1 tbsp oil, for cooking
Instructions
- Heat a splash of oil in a large pan or pot over medium heat. Add the onion and cook until softened. Stir in the garlic for about 30 seconds.
- Add the chicken to the pan. Sprinkle with taco seasoning, cumin, smoked paprika, salt and pepper. Turn the chicken to coat slightly.
- Pour in enough broth to come about halfway up the chicken. Cover, lower the heat, and simmer until cooked through, about 15-20 minutes for breasts, a bit longer for thighs.
- Remove the chicken and shred it with two forks. Return it to the pan with the juices and stir. Let it simmer for a few more minutes, squeezing lime before serving.
- Warm the tortillas in a skillet or microwave. Fill with shredded chicken and your favorite toppings.
Notes
Use chicken thighs for extra juiciness. Always warm the tortillas before filling.
