Description
Delicious and quick Korean beef bowls topped with a spicy mayo, perfect for any weeknight dinner.
Ingredients
Scale
- 1 pound thinly sliced beef (flank or sirloin)
- 3 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- Vegetable oil for cooking
- 2 green onions, sliced (for garnish)
- 4 cups cooked rice (white or brown)
- 1 cucumber, thinly sliced (optional)
- 1 carrot, julienned (optional)
- 1/2 cup mayonnaise
- 2 tablespoons Sriracha (adjust to taste)
- 1 tablespoon lime juice
- Sesame seeds for garnish (optional)
Instructions
- Begin by preparing your spicy mayo. In a small bowl, whisk together the mayonnaise, Sriracha, and lime juice until fully blended. Adjust the Sriracha based on your preferred spice level. Set aside.
- Next, heat a tablespoon of vegetable oil in a large skillet over medium-high heat. Once hot, add the minced garlic and ginger, and sauté for about 30 seconds until fragrant.
- Add the thinly sliced beef to the skillet, cooking until browned, which typically takes around 3-5 minutes. Ensure the beef is evenly coated with the garlic and ginger.
- Pour in the soy sauce, brown sugar, and sesame oil. Stir well to combine and let the mixture cook for an additional 2-3 minutes.
- While the beef is cooking, prepare your bowls. Divide the cooked rice among four bowls, ensuring each gets a generous scoop.
- Once the beef is ready, spoon it over the rice in each bowl. Add fresh cucumber slices and julienned carrots for a splash of color and crunch.
- Finish by drizzling the spicy mayo over the top and sprinkling with sliced green onions and sesame seeds if you like. Serve immediately.
