Description

A creamy and tangy Mexican Street Corn Salad that combines the flavors of street corn in an easy-to-eat format.

Ingredients

Scale
  • 2 cups corn (fresh, frozen, or canned)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream or Greek yogurt
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder or Tajin
  • 1 small clove garlic, minced
  • 1/2 cup crumbled cotija cheese (or feta)
  • 1/4 cup chopped cilantro (optional)
  • 2 green onions or finely diced red onion
  • Salt and pepper to taste
  • Optional: chopped jalapeno or hot sauce for heat

Instructions

  1. Cook the corn: Cut fresh corn off the cob or thaw frozen corn. Heat a skillet over medium-high heat, add a little butter or oil, and add the corn. Allow it to brown for 5-8 minutes.
  2. Mix the creamy dressing: In a large bowl, stir together mayonnaise, sour cream or Greek yogurt, lime juice, chili powder or Tajin, and minced garlic. Season with salt and pepper.
  3. Combine and finish: Add the warm corn to the dressing and toss well. Fold in the crumbled cotija, cilantro, and green onion. Taste and adjust seasoning if necessary.
  4. Serve with an extra sprinkle of chili powder and cheese on top if desired.

Notes

Let the salad sit for 10 minutes before serving to meld flavors. Optionally, keep extra cheese and cilantro for presentation.
