Description

A warm and comforting Southern classic, Luscious She Crab Soup is a creamy, crab-infused dish that immerses you in a coastal dining experience.

Ingredients

Scale
  • 1 pound of fresh lump crab meat
  • 4 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 2 celery stalks, finely chopped
  • 1 carrot, finely chopped
  • 3 cloves of garlic, minced
  • 4 cups seafood stock or chicken broth
  • 1 cup heavy cream
  • 1/2 cup milk
  • 1/4 cup all-purpose flour
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon sherry (or sparkling grape juice as a substitute)
  • 1 tablespoon Old Bay seasoning
  • Salt and pepper to taste
  • Chopped chives or parsley for garnish

Instructions

  1. Begin by melting the butter in a large pot over medium heat. Add the onions, celery, and carrots, sautéing until they’re soft and fragrant, about 5-7 minutes.
  2. Toss in the minced garlic and cook for an additional 1-2 minutes, stirring to prevent it from burning.
  3. Sprinkle in the flour while stirring continuously. Cook the flour mixture for about 2 minutes until it lightly toasts.
  4. Gradually whisk in the seafood stock or chicken broth, ensuring there are no lumps from the flour.
  5. Pour in the heavy cream and milk, stirring to combine. Allow to simmer for about 10-15 minutes, stirring occasionally.
  6. Add in the Worcestershire sauce, sherry, Old Bay seasoning, salt, and pepper. Taste and adjust seasoning as necessary.
  7. Gently fold in the lump crab meat, letting it heat through for about 5 minutes.
  8. Ladle the soup into bowls and garnish with chopped chives or parsley.

Notes

For a dairy-free version, substitute heavy cream with coconut milk. For low-carb adjustments, consider using cauliflower puree.
