Description

A delightful twist on classic meatloaf that brings the family together with robust flavors and hearty ingredients.

Ingredients

Scale
  • 2 pounds ground beef (or a combination of ground beef and turkey)
  • 1 cup breadcrumbs (or gluten-free breadcrumbs)
  • 1/2 cup milk
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon dried Italian herbs (oregano, basil, thyme)
  • 1/2 cup ketchup (plus extra for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the breadcrumbs and milk in a large bowl and let soak for about five minutes.
  3. Add the ground beef (or chosen mix), diced onion, bell pepper, minced garlic, eggs, Worcestershire sauce, salt, pepper, and Italian herbs to the bowl and mix gently.
  4. Shape the mixture into a loaf and transfer to a greased baking dish or lined baking sheet.
  5. Spread ketchup generously on top of the meatloaf.
  6. Bake for about 60 minutes, checking to cover with foil after 45 minutes if necessary.
  7. Let the meatloaf rest for about 10 minutes before slicing.

Notes

For a healthier version, use ground turkey, oats, or zucchini instead of breadcrumbs, and Greek yogurt instead of milk.
