Mango-Glazed Chicken Twists

  • Author: emily-mitchell
  • Total Time: 40 minutes
  • Yield: 4 servings 1x

Description

Juicy chicken strips coated in a sweet and savory mango glaze, wrapped in tortilla or puff pastry for a delightful twist.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breast, cut into strips
  • 1 cup fresh mango, diced or pureed
  • 2 tablespoons soy sauce
  • 2 tablespoons honey (or maple syrup for a vegan option)
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon olive oil (or any vegetable oil)
  • 1 tablespoon rice vinegar
  • Black pepper to taste
  • Green onions for garnish
  • Sesame seeds for garnish
  • Tortilla wraps or puff pastry

Instructions

  1. Begin by marinating the chicken. In a bowl, combine the diced mango, soy sauce, honey, minced garlic, grated ginger, olive oil, rice vinegar, and black pepper. Toss in the chicken strips, ensuring they’re well-coated. Let it sit for at least 15 minutes.
  2. Preheat your oven to 400°F (200°C). Transfer the marinated chicken to a baking sheet lined with parchment paper. Bake for about 20 minutes or until the chicken is cooked through and slightly golden.
  3. If you’re using tortilla wraps, warm them in a pan for a few seconds on each side to make them pliable. If using puff pastry, roll it out on a floured surface and cut it into strips.
  4. Once the chicken is ready, layer slices on your wrap or pastry. Drizzle some extra mango glaze over the chicken for additional flavor.
  5. Now, twist the wrap or pastry around the chicken strips tightly to avoid any leakage during baking.
  6. Arrange the twisted delights back on the baking sheet and bake for another 10-12 minutes until golden brown and crispy.
  7. Let them cool for a minute before serving. Garnish with green onions and sprinkle sesame seeds on top. Enjoy!

Notes

For a vegetarian option, substitute chicken with tofu or chickpeas. Store leftovers in an airtight container in the refrigerator for up to 3 days.
