Description
A comforting dish featuring tender marinated chicken paired with creamy mashed potatoes for a satisfying meal.
Ingredients
Scale
- 2 large chicken breasts, skinless and boneless
- 4 cloves garlic, minced
- 2 tablespoons fresh herbs (thyme, rosemary, or parsley), finely chopped
- 2 tablespoons olive oil
- 1 tablespoon honey or maple syrup
- Salt and pepper, to taste
- 2 pounds Yukon Gold potatoes, peeled and cut into chunks
- ½ cup heavy cream (or milk for a lighter version)
- 4 tablespoons unsalted butter
- Optional: ¼ cup sour cream or cream cheese for added creaminess
Instructions
- Start by marinating the chicken. In a bowl, combine minced garlic, chopped herbs, olive oil, honey, salt, and pepper. Add the chicken breasts, ensuring they’re fully coated in the marinade. Cover and let it sit at room temperature for about 15 minutes.
- While the chicken marinates, bring a large pot of salted water to a boil. Add the peeled and cut potatoes, cooking them until they’re fork-tender, about 15-20 minutes. Drain and return them to the pot.
- In a small saucepan, heat the cream and butter over low heat just until the butter melts. Mash the drained potatoes with a potato masher or a ricer, then slowly incorporate the cream mixture. Season to taste with salt and pepper.
- Now, it’s time to cook the chicken. Preheat a skillet over medium-high heat. Add olive oil and then place the marinated chicken into the skillet. Sauté for about 6-7 minutes on each side until golden brown and cooked through.
- Once the chicken’s cooked, let it rest for a few minutes. Meanwhile, fluff the mashed potatoes with a fork.
- Serve the chicken breasts atop a generous scoop of creamy mashed potatoes, pouring any drippings from the skillet over the chicken. Garnish with fresh herbs.
Notes
For a lighter version, substitute chicken breast with skinless chicken thighs or opt for grilled tofu or tempeh for a vegan option.
