Description
A cozy yet impressive roast chicken recipe with flavorful garlic butter for juicy meat and crispy skin.
Ingredients
Scale
- 1 whole chicken, about 4 to 5 pounds
- Salt and black pepper
- 6 tablespoons butter, softened
- 4 to 6 garlic cloves, finely chopped or grated
- 1 teaspoon paprika (optional)
- 1 tablespoon chopped fresh parsley or thyme (or 1 teaspoon dried)
- 1 lemon, cut in half
- 1 small onion, quartered
- Optional: a few carrots and small potatoes for the pan
- Optional: a splash of olive oil if the butter is very firm
Instructions
- Prep the chicken and dry the skin: Preheat your oven to 425°F. Remove any giblets and pat the chicken dry. Season generously with salt and pepper.
- Mix the garlic butter: In a small bowl, mix softened butter with garlic, paprika, and herbs. Rub the butter under the skin of the chicken and all over the outside.
- Stuff the cavity: Fill it with lemon halves and onion quarters. Optionally tie the legs together.
- Roast the chicken: Place it in a roasting pan and roast at 425°F for 20 minutes, then lower to 375°F for 60-80 minutes, or until the internal temperature reaches 165°F. Let it rest for 15 minutes before carving.
Notes
Ensure the chicken skin is dry for maximum crispiness. Feel free to experiment with herbs and spices for added flavor.
