Description
Delightful sweet-tart cranberry roll ups, perfect for holiday gatherings.
Ingredients
Scale
- 1 cup fresh cranberries (or frozen, thawed)
- ½ cup granulated sugar
- 1 teaspoon orange zest
- 4 large flour tortillas (or gluten-free substitutes)
- 8 ounces cream cheese (softened)
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
- ½ cup chopped pecans or walnuts (optional)
- Extra cranberries (for garnish)
- Fresh mint leaves (for garnish)
- Powdered sugar (for dusting)
Instructions
- Start by preparing the cranberry filling. In a medium saucepan, combine the cranberries, sugar, and orange zest. Cook over medium heat, stirring occasionally, until the cranberries burst and the mixture thickens, about 10-15 minutes.
- While the cranberry mixture cools, prepare the tortilla base. In a mixing bowl, combine the softened cream cheese, vanilla extract, and cinnamon. Mix until smooth.
- Once the cranberry filling has cooled, spread a generous layer of the cream cheese mixture over each tortilla, leaving a small border at the edges.
- Next, spoon some of the cranberry filling on top of the cream cheese, spreading it evenly.
- If you’re using nuts, sprinkle them evenly over the cranberry filling.
- Carefully roll each tortilla tightly from one end to the other. Wrap them tightly in plastic wrap and refrigerate for at least 30 minutes.
- After chilling, unwrap the roll ups and slice them into bite-sized pieces. Arrange them on a serving platter, dust the tops lightly with powdered sugar, and garnish with fresh cranberries and mint leaves.
Notes
For a vegan version, use plant-based cream cheese. For gluten-free, opt for rice or almond flour tortillas.
