Description

A simple and vibrant recipe for pickled beets that adds a sweet tang to your meals without the hassle of canning.

Ingredients

Scale
  • 4 medium Beets, cooked, peeled, and sliced
  • 1 cup White vinegar or apple cider vinegar
  • 1 cup Water
  • 1/2 to 3/4 cup Sugar, depending on desired sweetness
  • 1 1/2 teaspoons Salt
  • Optional: 6 to 10 whole Peppercorns
  • Optional: 2 to 3 whole Cloves or a small pinch of ground Cloves
  • Optional: 1 small Cinnamon stick
  • Optional: 1 Bay leaf

Instructions

  1. Cook and prep the beets: Trim the tops, rinse, and boil or roast until tender. Alternatively, you can use pre-cooked beets.
  2. Make the sweet brine: In a small pot, combine vinegar, water, sugar, and salt. Warm over medium heat until sugar dissolves.
  3. Pack the jar: Place sliced beets in a clean jar and pour the warm brine over them. Ensure they are fully submerged.
  4. Chill and let the flavor grow: Allow to cool, then refrigerate. Best after 24 hours.

Notes

Wear gloves when handling beets to avoid staining your hands. Store in a clean jar and consume within 2-4 weeks.
