Description
A warm and comforting soup that captures the flavor of homemade pot pie without the fuss of pastry.
Ingredients
Scale
- 2 tablespoons of butter or ghee
- 1 cup of chopped onions
- 2 cloves of garlic, minced
- 2 cups of diced carrots
- 2 cups of diced celery
- 1 cup of peas (fresh or frozen)
- 1 pound of cooked chicken, shredded (or turkey)
- 4 cups of chicken broth (or vegetable broth for a vegetarian option)
- 1 cup of heavy cream or coconut milk for a dairy-free alternative
- 1 teaspoon of dried thyme
- 1 teaspoon of dried rosemary
- Salt and pepper to taste
- Optional: 1 tablespoon of all-purpose flour for thickening
- Fresh parsley for garnish
Instructions
- Begin by melting butter or ghee in a large pot over medium heat. Add the chopped onions and sauté until they’re translucent, about 3-4 minutes.
- Toss in the minced garlic, diced carrots, and diced celery. Stir them together and cook for another 5-6 minutes.
- Once those veggies have softened, stir in the peas and shredded chicken. Mix everything well.
- Pour in the chicken broth, followed by the heavy cream (or coconut milk). Stir in the dried thyme and rosemary. Bring this mixture to a gentle boil.
- If you prefer a thicker consistency, take one tablespoon of flour and mix it with a small amount of broth in a separate bowl to create a slurry. Slowly pour this back into the soup, stirring well to combine.
- Finish by simmering until the soup thickens slightly and the flavors meld together. Taste and season with salt and pepper as needed.
- Once it’s done, ladle the soup into bowls and garnish with fresh parsley.
Notes
Feel free to substitute chicken with turkey, lentils, or vegetables for a vegetarian option. This soup can be frozen for 2-3 months.
