Description

A fresh and zesty apple cranberry coleslaw that brings crunch and flavor to any meal.

Ingredients

Scale
  • 4 cups green cabbage, finely shredded
  • 1 cup red cabbage, finely shredded
  • 1 large carrot, grated
  • 1 medium apple, cored and diced
  • 1 cup sweetened dried cranberries
  • 1/2 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons honey
  • Salt and pepper to taste
  • 1/2 cup toasted walnuts or pecans (optional)
  • 1/2 teaspoon cinnamon (optional)
  • Fresh herbs like parsley or cilantro (optional)

Instructions

  1. Start by washing and preparing your vegetables. Rinse the cabbages, cut off the cores, and finely shred them.
  2. In a large mixing bowl, combine the shredded green cabbage, red cabbage, grated carrot, diced apple, and dried cranberries.
  3. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, and honey until smooth.
  4. Pour the dressing over the cabbage mixture and toss until every strand and piece is coated.
  5. For added texture, you can toss in your toasted nuts at this stage.
  6. Cover the bowl and place it in the refrigerator for at least 30 minutes.
  7. When you’re ready to serve, give the coleslaw another gentle toss.

Notes

For a vegan version, use plant-based mayonnaise. To keep the crunch, store dressed and undressed ingredients separately until ready to serve.
