Description

A hearty and comforting slow-cooked stew filled with meat and vegetables in a savory tomato-based broth, perfect for busy weeknights or cozy dinners.

Ingredients

Scale
  • 1 pound of beef or chicken (chicken thighs or drumsticks recommended)
  • 1 can of diced tomatoes (14.5 ounces)
  • 1 can of tomato sauce (8 ounces)
  • 1 can of corn (15 ounces), drained
  • 1 can of green beans (14.5 ounces), drained
  • 1 onion, diced
  • 1 bell pepper (any color), diced
  • 2–3 cloves of garlic, minced
  • 2 cups of beef or chicken broth
  • 2–3 medium potatoes, diced (yukon gold or red potatoes recommended)
  • 1 teaspoon of Italian seasoning
  • Salt and pepper to taste
  • Optional: 1 cup of frozen peas
  • Optional: 1-2 tablespoons of chili powder
  • Optional: Fresh parsley for garnish

Instructions

  1. Start by prepping your ingredients. Dice the onion, bell pepper, and potatoes into nice bite-sized pieces. The key here is to make them roughly the same size, so they cook evenly. Mince the garlic to release its tasty flavors.
  2. In your crock pot, combine the diced tomatoes, tomato sauce, corn, green beans, onion, bell pepper, garlic, and broth. Stir everything together to mix the flavors well.
  3. Add in the diced potatoes and any optional ingredients like frozen peas or chili powder. Season with Italian seasoning, salt, and pepper to taste.
  4. Cut your beef or chicken into pieces if necessary, and add it to the pot. Make sure everything is covered with liquid, so the meat stays moist while cooking.
  5. Cover your crock pot with the lid and cook on low for 360 minutes or on high for 240 minutes. If you’re around, give it a stir occasionally, but it’s not essential!
  6. Once it’s cooked to perfection, taste and adjust your seasonings if necessary. You might find it needs a pinch more salt or maybe another dash of chili powder for that extra kick.
  7. Ladle the stew into bowls and garnish with fresh parsley if you’re feeling fancy.

Notes

This stew can easily be customized with different meats or vegetables according to taste preferences. It pairs well with bread or salad.
