Description
Deliciously crispy quesadillas filled with fluffy scrambled eggs and melty cheese, perfect for a hearty breakfast.
Ingredients
Scale
- 4 large eggs
- 1 cup shredded cheese (Cheddar, Monterey Jack, or your favorite blend)
- 4 flour tortillas (whole wheat or corn)
- 1 tablespoon butter or olive oil
- Salt and pepper, to taste
- Optional toppings: salsa, avocado slices, hot sauce, or fresh herbs
- Optional protein: diced turkey bacon, chicken sausage, or beef bacon alternatives
Instructions
- Start by cracking the eggs into a mixing bowl. Whisk them together until they’re well combined, and season with salt and pepper.
- Heat a non-stick skillet over medium heat. Once it’s hot, add butter or olive oil.
- Pour the whisked eggs into the skillet and cook undisturbed for about 3-4 minutes until the bottoms start to set. Gently stir until nearly cooked through but slightly soft.
- Lay one tortilla flat on a clean cutting board. Spoon half of the scrambled eggs onto one half of the tortilla and sprinkle half of the cheese over the eggs.
- Fold the tortilla in half and press gently. Repeat with the second tortilla.
- Return the skillet to the heat and add the quesadilla. Cook for 2-4 minutes on each side until golden brown and crispy.
- Serve hot, garnished with your choice of toppings.
Notes
For healthier alternatives, use egg whites or incorporate veggies into the egg mixture.
