  • Author: emily-mitchell

  • Yield: 4 servings 1x

Description

Delicious crispy chicken cutlets with a golden, crunchy exterior and tender, flavorful meat.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (Panko for extra crunch)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt and pepper, to taste
  • Vegetable oil, for frying
  • Fresh parsley, for garnish

Instructions

  1. Start by preparing your chicken. Pound the chicken breasts until they’re about 1/2 inch thick, then season with salt, pepper, garlic powder, onion powder, and paprika.
  2. Set up a dredging station with flour, whisked eggs, and breadcrumbs combined with salt and any desired herbs or cheese.
  3. Dip each chicken breast into the flour, then the egg wash, and finally into the breadcrumbs, ensuring an even coating.
  4. Heat about 1/4 inch of vegetable oil in a skillet over medium heat until hot.
  5. Carefully add breaded chicken cutlets to the hot oil, frying each side for about 4-5 minutes until golden brown.
  6. Transfer cooked cutlets to a paper towel-lined plate to drain excess oil.

Notes

For extra crunch, consider mixing grated Parmesan with breadcrumbs or use chicken thighs for juiciness. Leftovers can be refrigerated for up to 3 days.
