Description

Delicious and comforting creamed corn, perfect for any meal or holiday gathering.

Ingredients

Scale
  • 4 cups fresh corn kernels (around 6–8 ears of corn) or 2 (15 oz) cans of corn
  • 1 cup heavy cream
  • 1/2 cup milk
  • 2 tablespoons unsalted butter
  • 1 tablespoon sugar
  • Salt and black pepper to taste
  • Optional: 1/2 teaspoon garlic powder
  • Optional: Pinch of cayenne pepper
  • Optional: Fresh herbs like chives or parsley for garnish

Instructions

  1. Start by preparing your fresh corn if you’re using it. Husk the corn, remove the silk, and carefully cut the kernels off the cob. Alternatively, if you’re using canned corn, simply drain and rinse the kernels.
  2. In a large skillet or saucepan, melt the unsalted butter over medium heat. Once the butter is melted and bubbling gently, add in the fresh or canned corn. Stir intermittently, cooking for about 5 minutes.
  3. Then, pour in the heavy cream and milk. Increase the heat to medium-high and bring the mixture to a gentle simmer. Add the sugar, salt, and black pepper. Sprinkle in garlic powder or cayenne pepper if desired.
  4. Continue to cook the corn mixture, stirring occasionally, until it thickens slightly—around 8-10 minutes.
  5. Once you achieve your desired thickness, remove the skillet from the heat. Taste your creamed corn and adjust the salt and sugar as needed. Lastly, sprinkle some chopped chives or parsley on top for garnish.

Notes

Using fresh corn elevates the flavor, but canned corn is a great alternative for convenience.
