Description

A delightful dish combining succulent chicken with tangy cranberries, perfect for weeknight dinners or special occasions.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup fresh or frozen cranberries
  • 1 cup cranberry juice (unsweetened preferred)
  • 1/4 cup honey or maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: 1/4 cup chopped green onions or parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the cranberry juice, honey, Dijon mustard, olive oil, garlic powder, onion powder, and a pinch of salt and pepper in a large mixing bowl.
  3. Place the chicken breasts in a baking dish and pour the marinade over them.
  4. Sprinkle fresh or frozen cranberries over the top of the chicken and cover with foil.
  5. Bake for about 25-30 minutes, then remove the foil and bake for an additional 10-15 minutes.
  6. Check that the chicken reaches an internal temperature of 165°F (75°C), then let it rest before serving.

Notes

Marinating the chicken longer enhances the flavor. Try using different fruits or chicken substitutes for variety.
