Description
A delicious fusion of grilled cheese and chicken parmesan, combining juicy chicken, zesty marinara, and gooey cheese between crispy, toasted bread.
Ingredients
Scale
- 2 slices of sourdough or Italian bread
- 1 boneless, skinless chicken breast (about 6 oz)
- Salt and pepper (to taste)
- Olive oil (for frying)
- 1/2 cup marinara sauce
- 1/2 cup mozzarella cheese (shredded)
- Fresh basil leaves (optional)
- Parmesan cheese (grated)
- Butter (for toasting the bread)
- Garlic powder (to taste)
Instructions
- Preheat a skillet over medium heat. Season both sides of the chicken breast with salt, pepper, and garlic powder.
- Add a tablespoon of olive oil to the skillet. Once it shimmers, place the chicken in the skillet. Cook for 5 to 6 minutes on each side until cooked through.
- Remove the chicken from the pan and let it rest before slicing.
- Butter one side of each slice of bread. Place one slice in the skillet, buttered side down.
- Layer half of the mozzarella cheese, the sliced chicken, marinara sauce, and the remaining mozzarella on top. Sprinkle grated Parmesan cheese.
- Top with the second slice of bread, buttered side up. Cook for 3 to 5 minutes until golden brown. Flip the sandwich and toast the other side.
- Remove the sandwich from the skillet. Let it rest for a minute before slicing in half. Garnish with fresh basil if desired.
Notes
Serve with side salad or fries for a complete meal. You can use leftover rotisserie chicken for a quicker preparation.
