Description

Delight in warm, soft cookies with a rich peanut butter flavor, made easy with cake mix.

Ingredients

Scale
  • 1 box of yellow or vanilla cake mix (15.25 oz)
  • 1 cup creamy or crunchy peanut butter
  • 2 large eggs
  • 1/2 cup granulated sugar (for rolling)
  • 1/2 teaspoon vanilla extract (optional)
  • 1/2 teaspoon baking soda
  • Optional add-ins: chocolate chips, chopped nuts, or candies

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the cake mix, peanut butter, and eggs in a large mixing bowl. Add the vanilla extract and baking soda if desired. Stir until well-blended.
  3. Scoop tablespoon-sized portions of dough and roll them into balls. Roll each ball in granulated sugar.
  4. Place the sugar-coated dough balls on a baking sheet lined with parchment paper, spaced about 2 inches apart. Flatten each ball slightly.
  5. Bake for 8 to 10 minutes, until edges turn light golden brown.
  6. Let them cool for a few minutes before transferring to a wire rack to cool completely.

Notes

For a vegan version, substitute the eggs with unsweetened applesauce. Store cookies in an airtight container at room temperature for up to a week.
