Description
A comforting dish featuring tender chicken thighs cooked in a rich, flavorful sauce, perfect for any meal.
Ingredients
Scale
- 2 to 3 pounds of chicken thighs, skinless and boneless
- 2 tablespoons of soy sauce
- 1 tablespoon of browning sauce
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon of ginger, grated
- 2 bell peppers, chopped (green and red)
- 1 carrot, sliced
- 2 to 3 green onions, chopped
- 1 teaspoon of thyme, dried or fresh
- 1 teaspoon of allspice powder
- 1 teaspoon of black pepper
- 1 teaspoon of salt (or to taste)
- 2 cups of chicken broth or water
- 1 tablespoon of vegetable oil
- Optional: 1-2 tablespoons of hot sauce
- Optional: 1 can of diced tomatoes
Instructions
- Marinate the chicken. In a large bowl, combine the chicken with soy sauce, browning sauce, ginger, garlic, thyme, allspice, salt, and pepper. Allow it to sit for at least 30 minutes.
- Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the marinated chicken. Sear until golden brown on both sides, about 5-7 minutes.
- Remove the chicken and set aside. In the same skillet, add the diced onion, bell peppers, and carrot. Sauté until tender and caramelized, about 5 minutes.
- Return the chicken to the skillet and pour in the chicken broth or water. Stir in the chopped green onions and optional diced tomatoes.
- Simmer the mixture, then reduce the heat to low. Cover and cook for about 30 minutes.
Notes
For enhanced flavor, marinate the chicken for several hours or overnight. This dish can be made ahead, often tasting even better the next day.
