Description
A quick and cozy shrimp scampi recipe that tastes fancy but is easy to make in about 30 minutes.
Ingredients
- Shrimp (1 to 1.25 pounds), peeled and deveined
- Butter (4 to 5 tablespoons), salted or unsalted
- Olive oil (1 to 2 tablespoons)
- Garlic (4 to 6 cloves), minced
- Lemon (1 large), zest plus 2 to 3 tablespoons juice
- White wine or broth (1 3/4 cup)
- Red pepper flakes (a pinch), optional
- Salt and black pepper, to taste
- Parsley (a small handful), chopped
- Grated parmesan for serving, optional
- Cooked pasta (linguine or spaghetti), optional
Instructions
- Prep the shrimp. Pat the shrimp dry with paper towels, then season with salt and pepper.
- Warm the pan. In a large skillet on medium heat, add olive oil and 2 tablespoons of butter. Once melted, add garlic and red pepper flakes, stirring for about 30 seconds.
- Cook the shrimp. Add shrimp in a single layer and cook for 1 to 2 minutes per side until pink. Remove the shrimp to a plate.
- Make the sauce. Pour in wine or broth and scrape the bottom of the pan. Let it simmer for 2 to 3 minutes.
- Finish with butter and lemon. Add remaining butter, lemon zest, and lemon juice, stirring until glossy. Adjust salt and pepper.
- Bring it together. Add the shrimp back in and toss for 30 to 60 seconds. If using pasta, toss it in with a splash of pasta water.
